  1. Prepare the noodles
    Cook the lo mein noodles according to package instructions until al dente, about 4-5 minutes. Drain, rinse under cold water to stop cooking, and set aside. Toss with a little oil to prevent sticking.
  2. Make the sauce
    In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, and brown sugar until well combined. Set aside.
  3. Cook the chicken
    Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced chicken and cook for 4-5 minutes until golden brown and cooked through. Remove chicken from the pan and set aside.
  4. Stir-fry the vegetables
    In the same wok, add the remaining tablespoon of oil. Add garlic, ginger, and white parts of green onions, stirring for 30 seconds until fragrant. Add bell pepper, cabbage, and carrots. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Combine everything
    Return the chicken to the wok. Add the cooked noodles and sauce mixture. Using tongs, toss everything together until the noodles and chicken are well coated with sauce and heated through, about 2 minutes.
  6. Finish and serve
    Sprinkle with the green parts of the green onions and toss once more. Transfer to a serving platter or individual bowls and serve immediately while hot.
