
Japanese Yakisoba
Savory stir-fried noodles with vegetables and protein

Prepare the ingredientsSlice the meat and vegetables as directed. If using packaged yakisoba noodles, loosen them by rinsing briefly under warm water, then drain well. If your yakisoba sauce isn't pre-made, combine Worcestershire sauce, oyster sauce, and ketchup in a small bowl.

Cook the proteinHeat 1 tablespoon of oil in a large wok or skillet over high heat. Add the sliced pork or chicken and stir-fry until no longer pink, about 2-3 minutes. Add the ginger and garlic and cook for 30 seconds until fragrant.

Stir-fry the vegetablesAdd the remaining oil to the pan. Add onions and carrots, stir-frying for 1-2 minutes until they begin to soften. Add the cabbage and continue stir-frying for another 1-2 minutes until the cabbage begins to wilt but still maintains some crispness.

Add the noodlesPush the vegetables to one side of the pan and add the noodles to the empty space. Stir-fry the noodles for about 1 minute to heat through, then combine with the vegetables and meat.

Season and finishPour the yakisoba sauce and soy sauce over everything and toss well to coat all ingredients evenly. Continue stir-frying for another 1-2 minutes until everything is well combined and the noodles are heated through. Add green onions and toss once more.

Serve with toppingsTransfer to serving plates and garnish with traditional toppings like aonori (seaweed flakes), katsuobushi (bonito flakes), benishoga (pickled ginger), and a drizzle of Japanese mayonnaise if desired.
