
Shrimp Lo Mein
Quick and savory Chinese noodle dish with plump shrimp

Prepare the noodlesCook the lo mein noodles according to package instructions until al dente. Drain, rinse under cold water to stop cooking, and toss with 1 teaspoon of vegetable oil to prevent sticking. Set aside.

Cook the shrimpHeat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from the wok and set aside.

Stir-fry the aromaticsAdd the remaining oil to the wok. Add minced garlic and grated ginger, stir-frying for 30 seconds until fragrant. Be careful not to burn the garlic.

Cook the vegetablesAdd the carrots and bell pepper to the wok, stir-frying for 2 minutes. Then add the bok choy or cabbage and half the green onions, cooking for another 2 minutes until vegetables are crisp-tender.

Create the sauceIn a small bowl, mix together soy sauce, oyster sauce, sesame oil, and brown sugar. Pour into the wok with the vegetables and stir to combine.

Combine everythingAdd the cooked noodles and shrimp back to the wok. Toss everything together for 1-2 minutes until well combined and heated through. Make sure the sauce coats all the ingredients evenly.

ServeTransfer to serving plates and garnish with the remaining green onions. Serve immediately while hot.
