Prepare the shrimpPat the shrimp dry with paper towels. This ensures they'll crisp up nicely when cooked. Place them in a medium bowl.

Make the seasoningIn a small bowl, combine the salt, black pepper, white pepper, and five-spice powder (if using). Mix well to create your salt and pepper seasoning.

Coat the shrimpSprinkle the cornstarch over the shrimp and toss gently until all shrimp are lightly coated. This will create a crispy exterior when fried.

Fry the shrimpHeat the vegetable oil in a large wok or skillet over high heat. When the oil is hot but not smoking, add the shrimp in a single layer (work in batches if necessary). Cook for about 1-2 minutes per side until they turn pink and develop a crispy coating. Remove and drain on paper towels.

Prepare the aromaticsIn the same wok, reduce heat to medium and add a bit more oil if needed. Add the minced garlic, diced jalapeño, and grated ginger. Stir-fry for 30 seconds until fragrant, being careful not to burn the garlic.

Combine and seasonReturn the cooked shrimp to the wok and toss with the aromatic mixture. Sprinkle the salt and pepper seasoning over the shrimp and toss to coat evenly. Cook for another 30 seconds to allow the flavors to meld.
