  1. Prepare the Chicken
    Pat the chicken thighs dry with paper towels. Cut into 1-inch pieces and season lightly with salt and pepper. Set aside while preparing the sauce.
  2. Make the Honey Garlic Sauce
    In a medium bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes (if using). In a separate small bowl, mix cornstarch with water to create a slurry and set aside.
  3. Cook the Chicken
    Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook for 6-8 minutes, turning occasionally until golden brown and cooked through (internal temperature of 165°F/74°C).
  4. Add the Sauce
    Pour the honey garlic sauce over the cooked chicken. Bring to a simmer and cook for 2-3 minutes until it starts to reduce slightly.
  5. Thicken the Sauce
    Add the cornstarch slurry to the pan while stirring constantly. Continue to cook for 2-3 minutes until the sauce thickens and becomes glossy and sticky. Make sure all chicken pieces are well coated.
  6. Serve
    Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot over steamed rice or with your favorite vegetables.
