  1. Prepare the glaze
    In a medium bowl, whisk together maple syrup, Dijon mustard, soy sauce, olive oil, minced garlic, thyme, apple cider vinegar, salt, black pepper, and cayenne pepper (if using) until well combined.
  2. Marinate the chicken
    Place chicken breasts in a large resealable plastic bag or shallow dish and pour 3/4 of the maple glaze over them, reserving the remaining glaze for basting. Turn the chicken to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat and prepare
    Preheat oven to 375°F (190°C). Remove chicken from the marinade and place in a baking dish. Discard the used marinade.
  4. Bake the chicken
    Bake the chicken in the preheated oven for 20 minutes. Remove from oven and brush with half of the reserved glaze. Return to oven and bake for an additional 5-10 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
  5. Finish and serve
    Transfer the chicken to a serving plate and brush with the remaining glaze. Let rest for 5 minutes before serving to allow juices to redistribute. Sprinkle with fresh chopped rosemary as garnish and serve hot.
