
Beef Stir Fry with Rice Noodles

Prepare the noodlesSoak the rice noodles in hot water according to package instructions until they are soft but still slightly firm. Drain well and set aside.

Marinate the beefIn a medium bowl, combine the beef with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Toss to coat evenly and let marinate for 10 minutes at room temperature.

Prepare the sauceIn a small bowl, whisk together the remaining soy sauce, oyster sauce, brown sugar, and sesame oil. Set aside.

Cook the beefHeat 1 tablespoon of oil in a large wok or skillet over high heat. Add the beef in a single layer and cook without stirring for 1 minute. Then stir-fry for another 1-2 minutes until the beef is browned but still slightly pink inside. Remove from the wok and set aside.

Stir-fry the vegetablesIn the same wok, add the remaining oil. Add garlic and ginger and stir-fry for 30 seconds until fragrant. Add the bell pepper, broccoli, and carrot, and stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Combine all ingredientsReturn the beef to the wok. Add the drained rice noodles and sauce mixture. Toss everything together and cook for 2-3 minutes, allowing the noodles to absorb the sauce and everything to heat through.

Finish and serveAdd the green onions and toss quickly to incorporate. Remove from heat and serve immediately in warm bowls, garnished with additional green onions or sesame seeds if desired.
