Prepare the teriyaki sauceIn a medium bowl, combine soy sauce, mirin, brown sugar, sake (if using), minced garlic, and grated ginger. Whisk until the sugar has completely dissolved.

Marinate the beefPlace the thinly sliced beef in a large bowl and pour half of the teriyaki sauce over it. Reserve the remaining sauce for later. Gently mix to ensure all beef is coated and let marinate for 10 minutes while preparing other ingredients.

Cook the onionsHeat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onions and cook until they become soft and translucent, about 3-4 minutes.

Cook the beefAdd the marinated beef to the skillet with the onions. Cook, stirring frequently, until the beef is no longer pink, about 5-6 minutes. Be careful not to overcook as the thin slices cook quickly.

Add the remaining saucePour the reserved teriyaki sauce into the skillet. Bring to a simmer and cook for 2-3 minutes until the sauce thickens slightly and coats the beef.

Assemble the bowlsDivide the cooked rice among four serving bowls. Top each bowl with an equal portion of the teriyaki beef and sauce.

Garnish and serveSprinkle each bowl with sliced green onions and sesame seeds. Serve immediately while still hot.
