  1. Prepare the Mentaiko
    Carefully cut open the mentaiko sacs and scrape out the roe with a spoon. Set aside in a medium mixing bowl.
  2. Cook the Udon
    Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 8-10 minutes until al dente. Drain well, reserving about 1/4 cup of the cooking water.
  3. Create the Sauce
    While the noodles are cooking, melt the butter in a small saucepan over medium-low heat. Add the mentaiko, heavy cream, soy sauce, sake, and mirin. Stir gently until well combined but don't let it boil. Remove from heat.
  4. Combine Noodles and Sauce
    Add the hot, drained udon noodles to the mentaiko sauce and toss well to coat. If the sauce is too thick, add a splash of the reserved cooking water to achieve your desired consistency.
  5. Plate and Garnish
    Divide the noodles between two serving bowls. Sprinkle with the nori strips, sliced green onions, and toasted sesame seeds. Serve immediately while hot.
