
Mentaiko Udon
Creamy spicy cod roe udon noodles with umami flavors

Prepare the MentaikoCarefully cut open the mentaiko sacs and scrape out the roe with a spoon. Set aside in a medium mixing bowl.

Cook the UdonBring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 8-10 minutes until al dente. Drain well, reserving about 1/4 cup of the cooking water.

Create the SauceWhile the noodles are cooking, melt the butter in a small saucepan over medium-low heat. Add the mentaiko, heavy cream, soy sauce, sake, and mirin. Stir gently until well combined but don't let it boil. Remove from heat.

Combine Noodles and SauceAdd the hot, drained udon noodles to the mentaiko sauce and toss well to coat. If the sauce is too thick, add a splash of the reserved cooking water to achieve your desired consistency.

Plate and GarnishDivide the noodles between two serving bowls. Sprinkle with the nori strips, sliced green onions, and toasted sesame seeds. Serve immediately while hot.
