
Japanese Clear Soup
Light, savory dashi broth with tender vegetables

Prepare the dashi brothIn a large pot, add water and kombu. Heat over medium-low heat until just before boiling (about 10 minutes). Remove the kombu, add the bonito flakes, and turn off the heat. Let steep for 5 minutes, then strain through a fine-mesh sieve lined with cheesecloth. Discard the solids and return the broth to the pot.

Season the brothReturn the pot to medium heat and add soy sauce, mirin, and salt. Stir well to combine and bring to a gentle simmer for about 2 minutes to allow the flavors to meld together.

Add vegetablesAdd the sliced shiitake mushrooms and julienned carrots to the broth. Simmer for about 5 minutes until the vegetables begin to soften but still retain some texture.

Incorporate tofuGently add the tofu cubes to the simmering broth. Cook for an additional 3 minutes, being careful not to stir too vigorously to prevent the tofu from breaking apart.

Finish and serveJust before serving, add the lemon juice and half of the sliced green onions. Taste and adjust seasoning if necessary. Ladle the hot soup into individual serving bowls. Garnish with the remaining green onions and optional cilantro leaves. Serve immediately while hot.
