Add the vegetablesAdd the sliced carrots and shiitake mushrooms to the broth. Simmer for 5-7 minutes until the vegetables begin to soften. Then add the bok choy and cook for another 2 minutes.

Cook the gyozaGently add the gyoza dumplings to the simmering broth. Cook according to package instructions if store-bought (usually 3-4 minutes) or about 5 minutes if homemade, until they float to the top and are heated through.

Final touchesTaste the broth and adjust seasonings if needed. Remove from heat and stir in the green parts of the scallions, reserving some for garnish.
