    Pour in the vegetable broth, soy sauce, and rice vinegar. Bring to a gentle simmer and let it cook for 5 minutes to allow the flavors to meld together.
  3. Add the vegetables
    Add the sliced carrots and shiitake mushrooms to the broth. Simmer for 5-7 minutes until the vegetables begin to soften. Then add the bok choy and cook for another 2 minutes.
  4. Cook the gyoza
    Gently add the gyoza dumplings to the simmering broth. Cook according to package instructions if store-bought (usually 3-4 minutes) or about 5 minutes if homemade, until they float to the top and are heated through.
  5. Final touches
    Taste the broth and adjust seasonings if needed. Remove from heat and stir in the green parts of the scallions, reserving some for garnish.
  6. Serve
    Ladle the soup into bowls, ensuring each serving has 3 gyoza dumplings. Garnish with fresh cilantro and the remaining green onions. Serve immediately while hot.
