  1. Prepare the filling
    In a large bowl, combine the shredded cabbage, chopped shiitake mushrooms, grated carrots, green onions, minced garlic, and grated ginger. Mix well to distribute ingredients evenly.
  2. Season the mixture
    Add soy sauce, sesame oil, and rice vinegar to the vegetable mixture. Stir thoroughly to combine. Let sit for 10 minutes to allow flavors to meld together and for cabbage to soften slightly.
  3. Fill the gyoza wrappers
    Place a gyoza wrapper on a clean work surface. Spoon about 1 tablespoon of filling into the center. Moisten the edges of the wrapper with water using your finger. Fold the wrapper in half over the filling to form a half-moon shape. Pinch the edges to seal, creating pleats along one side for a traditional look. Repeat with remaining wrappers and filling.
  4. Cook the gyoza
    Heat vegetable oil in a large non-stick skillet over medium-high heat. Place gyoza in the pan, flat-side down, without overcrowding. Cook for 2-3 minutes until the bottoms are golden brown and crispy.
  5. Steam to finish cooking
    Carefully add 1/2 cup water to the skillet (it will sizzle), then immediately cover with a tight-fitting lid. Reduce heat to medium and steam for about 5 minutes until the water has evaporated and the gyoza wrappers appear translucent.
  6. Prepare the dipping sauce
    While the gyoza are cooking, mix soy sauce, rice vinegar, and chili oil (if using) in a small bowl. Stir to combine thoroughly.
  7. Serve immediately
    Transfer cooked gyoza to a serving plate, crispy side up. Serve hot with the prepared dipping sauce on the side. Garnish with additional sliced green onions if desired.
