  1. Prepare the vegetables
    Wash all vegetables thoroughly. Cut sweet potato, zucchini, and eggplant into 1/4-inch rounds. Cut bell pepper into 1-inch squares. Remove stems from shiitake mushrooms. Trim woody ends from asparagus. Pat all vegetables completely dry with paper towels.
  2. Make the tempura batter
    In a large bowl, lightly beat the cold egg. Add the ice-cold water and mix. Sift the flour into the bowl and stir with chopsticks or a fork just until combined. The batter should be lumpy - do not overmix or the tempura will become heavy.
  3. Prepare the dipping sauce
    In a small saucepan, combine soy sauce, mirin, dashi stock, and grated ginger. Bring to a simmer over medium heat, then remove from heat and transfer to small dipping bowls.
  4. Heat the oil
    In a large, heavy pot, heat vegetable oil to 350°F (175°C). Use a cooking thermometer to monitor the temperature. The oil should be 2-3 inches deep.
  5. Fry the vegetables
    Working in small batches, dip vegetables into the batter, allowing excess to drip off. Carefully place in hot oil and fry until golden and crisp, about 1-2 minutes for soft vegetables and 2-3 minutes for denser vegetables like sweet potato. Do not overcrowd the pot.
  6. Drain and serve
    Using a slotted spoon or spider strainer, remove tempura vegetables and place on a wire rack lined with paper towels to drain excess oil. Serve immediately while hot and crispy.
