  1. Prepare the tofu
    Drain the tofu and wrap in paper towels. Place a weight on top for about 30 minutes to remove excess moisture. Then cut into 1-inch cubes and pat dry with paper towels.
  2. Make the dashi broth
    In a small saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a simmer over medium heat. Stir until sugar dissolves, then remove from heat and set aside.
  3. Coat and fry the tofu
    Place potato starch in a shallow dish. Gently coat each tofu cube in the starch, shaking off excess. Heat vegetable oil in a deep pot or wok to 350°F (175°C). Carefully add tofu cubes and fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
  4. Prepare the garnishes
    While the tofu is frying, prepare the garnishes. Grate the daikon radish and squeeze out excess moisture. Slice the green onions thinly. Cut nori into thin strips if using.
  5. Serve the dish
    Place 3-4 tofu cubes in each serving bowl. Gently pour the warm dashi broth around the tofu (not on top, to maintain crispiness). Top with grated daikon, ginger, green onions, and nori strips. Sprinkle with shichimi togarashi or bonito flakes if desired. Serve immediately while the tofu is still crispy.
