  1. Cook the rice
    Place the rinsed rice and water in a rice cooker or medium saucepan. If using a rice cooker, cook according to manufacturer's instructions. If using a saucepan, bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the rice
    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large wooden or glass bowl and drizzle the vinegar mixture over it. Gently fold the rice with a wooden spoon to incorporate the seasoning, being careful not to mash the grains. Fan the rice to cool it to room temperature.
  3. Prepare the vegetable filling
    Heat sesame oil in a skillet over medium heat. Add diced carrots and cook for 3-4 minutes until slightly softened. Add cucumber, edamame, and green onions, and cook for another 2 minutes. Season with a pinch of salt, remove from heat, and let cool completely.
  4. Prepare your workspace
    Set up a small bowl of water with a pinch of salt dissolved in it. This is for wetting your hands to prevent the rice from sticking. Also prepare a plate for finished onigiri and have your nori strips and vegetable filling ready.
  5. Form the onigiri
    Wet your hands with the salted water. Take about 1/3 cup of rice and flatten it in your palm. Place 1 tablespoon of the vegetable filling in the center. Fold the rice around the filling and shape it into a triangle or ball. Press firmly but gently to ensure the onigiri holds its shape. Repeat with remaining rice and filling.
  6. Add nori and garnish
    Wrap a strip of nori around the base of each onigiri, with the rough side facing inward. This serves as a handle and helps keep the onigiri together. Sprinkle the tops with toasted sesame seeds for garnish and added flavor.
  7. Serve or store
    Serve immediately or wrap individually in plastic wrap to maintain freshness. Onigiri can be kept at room temperature for a few hours or refrigerated for up to 24 hours. If refrigerated, bring to room temperature before eating for best texture and flavor.
