Instructions

  1. Prepare the broth base
In a large pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  2. Create the miso mixture
In a small bowl, take about 1 cup of the hot broth and whisk in the miso paste until completely dissolved. Return this mixture to the pot along with soy sauce and mirin. Keep the broth at a low simmer, never allowing it to boil as this can destroy the delicate miso flavors.
  3. Cook the noodles
In a separate pot, cook the ramen noodles according to package instructions until they are al dente (usually 2-3 minutes for fresh noodles, 4-5 minutes for dried). Drain well and rinse briefly with cold water to stop the cooking process and prevent sticking.
  4. Prepare toppings
While the broth simmers and noodles cook, arrange your toppings: halve the soft-boiled eggs, slice the green onions, and ensure all other toppings are ready for assembly.
  5. Assemble the ramen bowls
Divide the cooked noodles among four large bowls. Ladle the hot miso broth over the noodles. Arrange the toppings attractively on top: place two egg halves, sliced pork, bean sprouts, and green onions on each bowl. Add a quarter sheet of nori standing partially in the broth.
  6. Final touches
Sprinkle each bowl with toasted sesame seeds. Serve immediately while hot, providing additional soy sauce, chili oil, or garlic-chili paste on the side for diners to adjust flavors to their preference.
