Shape the pretzel bitesPunch down the dough and divide into 8 equal pieces. Roll each piece into a rope about 20 inches long. Cut each rope into 1-inch pieces to make the pretzel bites. Place on parchment-lined baking sheets and let rest for 15 minutes.

Prepare the baking soda bathPreheat oven to 425°F (220°C). In a large pot, bring 8 cups of water and baking soda to a boil. Working in batches, boil pretzel bites for 20-30 seconds. Using a slotted spoon, transfer to parchment-lined baking sheets.
