
Obatzda Cheese Spread

Prepare the cheeseRemove the rind from the Camembert cheese and place the soft interior in a medium bowl. Allow it to come to room temperature for easier mixing.

Mix the baseAdd the softened butter and quark (or cream cheese) to the Camembert. Using a fork, mash everything together until well combined but still slightly chunky in texture.

Add the flavoringsStir in the finely diced red onion, sweet paprika, crushed caraway seeds, ground cumin, and chopped chives. If using beer, add it now to loosen the mixture slightly. Season with salt and freshly ground black pepper to taste.

Rest the mixtureCover the bowl and refrigerate for at least 1 hour to allow the flavors to meld. For best results, remove from the refrigerator about 30 minutes before serving to allow it to soften slightly.

ServeTransfer the Obatzda to a serving bowl, sprinkle with additional paprika and chopped chives. Garnish with sliced radishes and serve with fresh pretzels or rye bread.
