  1. Prepare the sausages
    Prick each bratwurst several times with a fork to prevent them from bursting during cooking. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the bratwurst and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.
  2. Sauté the aromatics
    In the same skillet, add the remaining tablespoon of oil. Add the sliced onions and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Cook the sauerkraut
    Add the rinsed and drained sauerkraut to the skillet with the onions and garlic. Stir in the beer, caraway seeds, brown sugar, bay leaf, and grated apple. Season with salt and pepper. Bring to a simmer and cook for 5 minutes to allow the flavors to meld together.
  4. Combine and finish cooking
    Nestle the browned bratwurst into the sauerkraut mixture. Reduce the heat to low, cover the skillet, and simmer for about 15 minutes, until the bratwurst are fully cooked through and the flavors have developed.
  5. Serve
    Remove the bay leaf. Transfer the bratwurst and sauerkraut to a serving platter or individual plates. Serve hot with whole grain mustard on the side. Traditional accompaniments include boiled potatoes or crusty bread.
