Instructions

  1. Prepare the rub
In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper until well combined.
  2. Season the pork
Pat the pork shoulder dry with paper towels. Rub the spice mixture all over the pork, making sure to coat all sides evenly. If time allows, wrap the seasoned pork in plastic wrap and refrigerate for 2-12 hours for deeper flavor.
  3. Prepare the slow cooker
Place sliced onions at the bottom of the slow cooker. Add minced garlic. Pour in chicken broth and apple cider vinegar.
  4. Cook the pork
Place the seasoned pork shoulder on top of the onions in the slow cooker, fat side up. Cover and cook on low heat for 8 hours, or until the pork is very tender and easily pulls apart with a fork.
  5. Shred the meat
Once cooked, remove the pork from the slow cooker and place it on a large cutting board or platter. Allow it to rest for about 10 minutes, then use two forks to shred the meat, removing and discarding any large pieces of fat.
  6. Add the sauce
Skim excess fat from the liquid in the slow cooker. Return the shredded pork to the slow cooker. Add barbecue sauce and stir to combine. Cover and cook on low for an additional 30 minutes to allow the flavors to meld.
  7. Serve
Serve the pulled pork on hamburger buns if desired, or on its own with additional barbecue sauce on the side. Classic sides include coleslaw, baked beans, cornbread, or potato salad.
