
Smoked Pulled Chicken Sliders

Prepare the chickenRub the chicken thighs with olive oil, then season generously with the BBQ dry rub. Make sure all sides are coated evenly. Let the chicken rest at room temperature for 15 minutes while you prepare your smoker.

Smoke the chickenPreheat your smoker to 250°F (120°C) using hickory or apple wood chips for flavor. Place the chicken thighs on the smoker grates and smoke for about 2 hours or until the internal temperature reaches 165°F (74°C).

Make the sauceWhile the chicken is smoking, combine BBQ sauce, apple cider vinegar, honey, and Worcestershire sauce in a small saucepan. Simmer over low heat for 10 minutes, stirring occasionally, until slightly thickened. Set aside.

Shred the chickenOnce the chicken is fully cooked, remove from the smoker and let rest for 10 minutes. Using two forks, shred the chicken into bite-sized pieces. Place the shredded chicken in a bowl and add about 3/4 of the prepared sauce. Mix thoroughly to coat the chicken.

Prepare the bunsMix the melted butter with garlic powder. Cut the slider buns in half horizontally and brush the inside of each bun with the garlic butter. Toast the buns in a skillet or on a grill for 1-2 minutes until lightly golden.

Assemble the slidersPlace a generous portion of the pulled chicken on the bottom half of each slider bun. Top with a spoonful of coleslaw and a few pickled red onions. Drizzle with additional BBQ sauce if desired. Place the top bun on and secure with a toothpick if needed.
