Prepare the beefPlace beef cubes in a large bowl and sprinkle with flour, salt, and pepper. Toss to coat evenly. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches, about 2-3 minutes per side, being careful not to overcrowd the pan. Transfer browned beef to the slow cooker.

Sauté the aromaticsIn the same skillet, add the onions and garlic. Cook for 2-3 minutes until softened and fragrant. Add tomato paste and stir for 1 minute. Pour in a small amount of beef broth to deglaze the pan, scraping up the browned bits from the bottom. Transfer this mixture to the slow cooker.

Add vegetables and liquidsAdd the carrots, celery, and potatoes to the slow cooker. Pour in the remaining beef broth, red wine (if using), Worcestershire sauce, bay leaf, and dried thyme. Season with additional salt and pepper. Stir gently to combine all ingredients.

Slow cookCover the slow cooker and cook on low for 7-8 hours or on high for 3-4 hours, until the beef is tender and falls apart easily when pierced with a fork. The vegetables should be soft but not mushy.

Adjust seasoningAbout 30 minutes before serving, taste the stew and adjust seasonings as needed. If you prefer a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir the slurry into the stew and cook for an additional 30 minutes with the lid slightly ajar.

ServeRemove the bay leaf before serving. Ladle the stew into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread for dipping.
