
German Sauerbraten
Traditional German pot roast marinated in a tangy sauce

Prepare the marinadeIn a large non-reactive pot, combine red wine vinegar, water, sliced onions, chopped carrots, celery, cloves, peppercorns, bay leaves, and sugar. Bring to a boil, then let cool completely to room temperature.

Marinate the meatPlace the beef roast in a large container or ziplock bag. Pour the cooled marinade over the meat, ensuring it's completely submerged. Cover and refrigerate for 2-3 days, turning the meat once daily to ensure even marinating.

Prepare for cookingRemove the meat from the marinade and pat dry with paper towels. Strain the marinade, reserving both the liquid and the vegetables/spices separately. Season the meat with salt.

Sear the meatHeat vegetable oil in a large Dutch oven over medium-high heat. Sear the meat on all sides until well-browned, about 3-4 minutes per side. Remove meat and set aside.

Cook the vegetablesAdd the reserved vegetables and spices to the pot and sauté for 5 minutes until they begin to soften. Return the meat to the pot and add enough of the reserved marinade to cover the meat halfway (about 2 cups).

Slow cook the SauerbratenBring the liquid to a simmer, then reduce heat to low. Cover and simmer gently for about 2.5-3 hours, turning the meat occasionally, until the meat is very tender and easily falls apart with a fork.

Prepare the gravyRemove the meat and keep warm. Strain the cooking liquid, discarding solids. Return the liquid to the pot and bring to a simmer. Gradually stir in crushed gingersnap cookies until the sauce thickens. Simmer for 10 minutes, then whisk in the sour cream until fully incorporated.

Serve the SauerbratenSlice the meat against the grain. Serve with the rich gravy poured over the top. Traditional accompaniments include red cabbage, potato dumplings, or spaetzle.
