Set up breading stationWhile the cheese is freezing, prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Italian breadcrumbs, panko breadcrumbs, Italian seasoning, garlic powder, salt, and pepper. Stir the breadcrumb mixture thoroughly to combine all seasonings.

Bread the cheese sticksWorking with a few cheese sticks at a time (keeping the rest in the freezer), dip each stick first into the flour, coating completely and shaking off excess. Then dip into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere. For extra crispiness, repeat the egg and breadcrumb steps for a double coating.

Freeze againReturn the breaded cheese sticks to the parchment-lined baking sheet and freeze for at least another 30 minutes or up to 24 hours. This crucial step ensures the coating stays intact during frying and the cheese doesn't melt too quickly.

Heat the oilIn a large, heavy-bottomed pot or deep fryer, heat oil to 350°F (175°C). Use a cooking thermometer to monitor the temperature, as oil that's too cool will make the sticks greasy, while oil that's too hot will burn the coating before the cheese melts.

Fry the mozzarella sticksWorking in batches of 4-5 sticks at a time to avoid overcrowding, carefully lower the frozen breaded cheese sticks into the hot oil. Fry for 60-90 seconds until golden brown and crispy. Be careful not to fry too long or the cheese will burst through the coating.

Drain and serveUsing a slotted spoon or tongs, remove the fried mozzarella sticks and place them on a plate lined with paper towels to absorb excess oil. Sprinkle with chopped parsley while still hot, if desired.

Prepare dipping sauceWarm the marinara sauce in a small saucepan or microwave. Transfer to a serving bowl and place alongside the mozzarella sticks. Serve immediately while the cheese is still hot and stretchy.
