Instructions

  1. Prepare the dressing
In a small bowl, whisk together the honey, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is well emulsified.
  2. Toast the almonds
Place sliced almonds in a dry skillet over medium heat. Toast for 3-5 minutes, stirring frequently, until they become golden brown and fragrant. Remove from heat and let cool.
  3. Assemble the salad base
In a large salad bowl, add the baby spinach leaves. Top with sliced strawberries, crumbled feta cheese, sliced red onion, and dried cranberries.
  4. Add finishing touches
Sprinkle the toasted almonds over the salad. If serving immediately, drizzle with about half of the honey mustard dressing and toss gently to coat. Serve the remaining dressing on the side.
  5. Serve or store
Serve immediately for the best flavor and texture. If preparing ahead, keep the dressing separate from the salad and combine just before serving to prevent wilting.
