Instructions

  1. Combine base ingredients
In a medium bowl, whisk together the red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
  2. Emulsify with olive oil
Slowly drizzle in the olive oil while whisking continuously to create a smooth emulsion. This gradual addition helps the dressing stay mixed rather than separating.
  3. Add herbs and seasonings
Stir in the dried Italian herbs, fresh parsley, red pepper flakes (if using), and grated Parmesan cheese. Mix thoroughly to distribute all ingredients evenly.
  4. Adjust flavors
Taste the vinaigrette and adjust seasonings as needed. If you prefer a less acidic dressing, add the optional honey or sugar. For more acidity, add additional vinegar or lemon juice.
  5. Rest and store
Transfer the dressing to a sealed container or jar and let it rest for at least 30 minutes before serving to allow the flavors to meld. Refrigerate for up to 1 week. Bring to room temperature and shake well before using.
