  1. Combine the base ingredients
    In a medium bowl, whisk together the balsamic vinegar, Dijon mustard, honey, minced shallot, and minced garlic until well combined.
  2. Emulsify with olive oil
    Slowly drizzle in the olive oil while whisking continuously. This creates an emulsion that helps prevent separation. Whisk until the dressing is smooth and slightly thickened.
  3. Add seasonings
    Add the dried Italian herbs, salt, black pepper, and lemon juice (if using). Whisk again to incorporate all ingredients thoroughly.
  4. Taste and adjust
    Taste the vinaigrette and adjust the seasonings as needed. For a sweeter dressing, add more honey; for more acidity, add more vinegar or lemon juice; for more depth, add a pinch more salt.
  5. Store properly
    Transfer the vinaigrette to a jar with a tight-fitting lid. The dressing can be used immediately but tastes even better if allowed to sit for at least 30 minutes to let the flavors meld.
