  1. Prepare the herbs
    Wash all herbs thoroughly and pat dry with paper towels. Remove the leaves from the stems and finely chop the basil, rosemary, thyme, and oregano.
  2. Mix the base
    In a medium bowl, whisk together the olive oil, red wine vinegar, lemon juice, and Dijon mustard until well combined and slightly emulsified.
  3. Add the aromatics
    Add the minced garlic, chopped herbs, honey, and red pepper flakes (if using) to the oil and vinegar mixture. Whisk thoroughly to incorporate all ingredients.
  4. Season the dressing
    Add salt and freshly ground black pepper to the dressing. Taste and adjust seasonings as needed, adding more salt, pepper, or honey for balance.
  5. Rest and infuse
    Allow the dressing to sit at room temperature for at least 30 minutes to let the flavors meld together. The longer it sits, the more the herbs will infuse the oil.
  6. Store or serve
    Transfer the dressing to an airtight container or glass jar with a tight-fitting lid. If not using immediately, refrigerate for up to 1 week. Bring to room temperature and shake well before serving.
