  1. Prepare the tahini base
    In a medium bowl, add the tahini paste and lemon juice. Stir with a whisk or fork. The mixture will become thick and might seize up - this is normal and will loosen as you continue.
  2. Add the flavoring ingredients
    Add the minced garlic, ground cumin, cayenne pepper (if using), salt, and black pepper to the tahini mixture. Mix until well combined.
  3. Thin the dressing
    Gradually add the cold water while whisking continuously until the dressing reaches your desired consistency. If it becomes too thin, add more tahini; if too thick, add more water, one tablespoon at a time.
  4. Incorporate the olive oil
    Slowly drizzle in the olive oil while whisking continuously to create a smooth, emulsified dressing. Add the maple syrup or honey if you'd like a touch of sweetness to balance the acidity.
  5. Adjust the seasonings
    Taste the dressing and adjust the seasonings as needed, adding more salt, pepper, lemon juice, or sweetener according to your preference.
  6. Finish and serve
    Stir in the chopped fresh parsley. Transfer to a serving container or storage jar. The dressing is ready to use immediately, but flavors will develop more if refrigerated for at least 30 minutes before serving.
