Lemon Tahini Dressing
Creamy Middle Eastern dressing with bright citrus notes
Ingredients
Instructions
-
Prepare the tahini baseIn a medium bowl, add the tahini paste and lemon juice. Stir with a whisk or fork. The mixture will become thick and might seize up - this is normal and will loosen as you continue.
-
Add the flavoring ingredientsAdd the minced garlic, ground cumin, cayenne pepper (if using), salt, and black pepper to the tahini mixture. Mix until well combined.
-
Thin the dressingGradually add the cold water while whisking continuously until the dressing reaches your desired consistency. If it becomes too thin, add more tahini; if too thick, add more water, one tablespoon at a time.
-
Incorporate the olive oilSlowly drizzle in the olive oil while whisking continuously to create a smooth, emulsified dressing. Add the maple syrup or honey if you'd like a touch of sweetness to balance the acidity.
-
Adjust the seasoningsTaste the dressing and adjust the seasonings as needed, adding more salt, pepper, lemon juice, or sweetener according to your preference.
-
Finish and serveStir in the chopped fresh parsley. Transfer to a serving container or storage jar. The dressing is ready to use immediately, but flavors will develop more if refrigerated for at least 30 minutes before serving.
