    Take 3 ounces of the blue cheese and set aside 1 ounce for garnish. Crumble the 3 ounces into small pieces, ensuring there are both fine crumbles and some larger chunks for texture.
  2. Mix the base ingredients
    In a medium bowl, combine the sour cream, mayonnaise, and buttermilk. Whisk together until smooth and well incorporated.
  3. Add flavorings
    Add the lemon juice, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt to the bowl. Whisk until all ingredients are thoroughly combined.
  4. Incorporate the blue cheese
    Gently fold in the 3 ounces of crumbled blue cheese and the chopped chives, being careful not to overmix. You want to maintain some texture from the cheese chunks.
  5. Adjust consistency
    If the dressing is too thick, add a little more buttermilk, one tablespoon at a time, until you reach your desired consistency. For a salad dressing, it should be pourable but still thick. For a dip, keep it thicker.
  6. Rest and garnish
