
Buffalo Cauliflower
Crispy, spicy vegetarian appetizer with creamy dipping sauce

Prepare the cauliflowerPreheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper. Wash the cauliflower and cut it into bite-sized florets, making sure they're roughly the same size for even cooking.

Make the batterIn a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of salt. Gradually add the milk while whisking to create a smooth, thick batter that will coat the back of a spoon but still be runny enough to dip the cauliflower.

Coat and bake the cauliflowerWorking in batches, dip the cauliflower florets into the batter, allowing excess to drip off, then arrange them in a single layer on the prepared baking sheet. Make sure they're not touching. Bake for 20 minutes, flipping halfway through, until the coating is crisp and golden brown.

Prepare the buffalo sauceWhile the cauliflower is baking, prepare the buffalo sauce by combining the hot sauce, melted butter, and honey (if using) in a small bowl. Whisk until smooth and well combined.

Coat with buffalo sauceRemove the cauliflower from the oven and brush or toss gently with the buffalo sauce, making sure each piece is well coated. Return to the oven and bake for an additional 5 minutes until the sauce is bubbling and slightly caramelized.

ServeTransfer the buffalo cauliflower to a serving platter. Sprinkle with chopped chives or green onions and serve immediately with blue cheese or ranch dressing and celery sticks on the side.
