Prepare the chickpeasIf using dried chickpeas, soak them overnight, then drain and rinse. Boil in fresh water until tender, about 45-60 minutes. If using canned chickpeas, drain and rinse thoroughly. Pat the chickpeas dry with a kitchen towel or paper towels.

Roast the chickpeasPreheat the oven to 400°F (200°C). Spread the chickpeas on a baking sheet in a single layer. Drizzle with 1 tablespoon of oil and roast for 25-30 minutes, stirring halfway through, until crispy and golden brown.

Prepare the spice mixtureWhile the chickpeas are roasting, heat the remaining oil in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds. Add the asafoetida (if using), followed by coriander powder, turmeric, red chili powder, and salt. Stir for 30 seconds to toast the spices without burning them.

Mix with spicesAdd the roasted chickpeas to the pan with the spice mixture. Toss well to coat the chickpeas evenly with the spices. Cook for 2-3 minutes, stirring constantly.

Add remaining flavorsTurn off the heat and add the garam masala, amchur powder (or lemon juice), chopped onions, and green chilies (if using). Mix well to combine all ingredients.

Final touchesAllow the mixture to cool slightly, then garnish with fresh cilantro. Serve warm or at room temperature as a snack or appetizer.
