  1. Prepare the onions
    Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and place them in a shallow dish. Remove any small inner rings and save them for another use.
  2. Create the dredging station
    Set up two bowls. In the first bowl, place 1 cup of flour. In the second bowl, whisk together the remaining cup of flour, baking powder, salt, black pepper, garlic powder, paprika, and cayenne pepper (if using).
  3. Make the batter
    Add the beaten egg and beer to the second bowl with the seasoned flour. Whisk until smooth with no lumps, creating a batter with the consistency of pancake batter. If too thick, add a splash more beer.
  4. Heat the oil
    In a large, heavy-bottomed pot or deep fryer, heat the oil to 375°F (190°C). Use a candy or deep-fry thermometer to ensure the oil maintains the correct temperature throughout cooking.
  5. Dredge and coat the onions
    Working in batches, dredge the onion rings first in the plain flour, shaking off excess, then dip into the beer batter, allowing excess to drip off. The flour coating helps the batter adhere to the onions.
  6. Fry to golden perfection
    Carefully lower 4-5 battered rings into the hot oil. Fry for 2-3 minutes, turning occasionally with a slotted spoon, until golden brown and crispy. Be careful not to overcrowd the pot as this will lower the oil temperature.
  7. Drain and season
    Remove the onion rings with a slotted spoon and transfer to a paper towel-lined plate or wire rack to drain excess oil. Immediately sprinkle with a pinch of salt while still hot.
  8. Serve while hot
    Serve the onion rings immediately while hot and crispy. They pair perfectly with burgers, sandwiches, or as an appetizer with dipping sauces like ketchup, ranch dressing, or aioli.
