  1. Prepare the herbs
    Thoroughly wash the chives, parsley, tarragon, and basil. Pat them dry with paper towels and roughly chop them to make measuring easier.
  2. Combine base ingredients
    In a food processor, combine the avocado, sour cream, and mayonnaise. Pulse until smooth and creamy, scraping down the sides as needed.
  3. Add herbs and seasonings
    Add the chopped herbs, anchovy fillets (if using), minced garlic, lemon juice, white wine vinegar, salt, and pepper to the food processor. Blend until all ingredients are thoroughly combined and the mixture is smooth with small flecks of herbs visible.
  4. Adjust consistency and flavor
    If the dressing is too thick, add 1-2 tablespoons of cold water and pulse to incorporate. Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.
  5. Chill and serve
    Transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld. The dressing will keep in the refrigerator for up to 5 days.
