Combine base ingredientsIn a medium bowl, whisk together the Greek yogurt, olive oil, lemon juice, and minced garlic until smooth and well incorporated.

Add herbs and seasoningsFold in the chopped dill, chives, and parsley. Add the honey, salt, pepper, and Dijon mustard (if using). Stir gently until all ingredients are evenly distributed.

Adjust flavorsTaste the dressing and adjust seasonings as needed. For a tangier dressing, add more lemon juice. For more sweetness, add a touch more honey. If it's too thick, thin with a small amount of water or milk.
