Prepare the spreadIn a small bowl, mix the softened butter, mayonnaise, and garlic powder until well combined. This will create a flavorful spread that helps create a perfectly crisp exterior.

Assemble the sandwichesLay out the bread slices on a cutting board. Spread the butter mixture on one side of each slice. Flip two of the slices over and layer with cheddar cheese, avocado slices, bacon, and pepper jack cheese. Top with the remaining bread slices, butter-side facing out.

Heat the panHeat a large skillet or griddle over medium-low heat. Add the olive oil and allow it to heat up for about 30 seconds.
