  1. Prepare the filling
    In a medium bowl, combine the softened cream cheese, 1/2 cup of the cheddar cheese, 1/4 cup of the Monterey Jack cheese, diced jalapeños, green onions, garlic powder, and smoked paprika. Mix well until all ingredients are evenly incorporated. If using bacon, fold in the crumbled bacon pieces.
  2. Assemble the sandwiches
    Spread about half of the filling evenly onto one slice of bread. Sprinkle with some of the remaining cheddar and Monterey Jack cheeses. Top with another slice of bread. Repeat with the remaining ingredients to make the second sandwich.
  3. Butter the bread
    Spread the softened butter evenly on the outside of each sandwich, making sure to cover the bread all the way to the edges for even browning.
  4. Cook the sandwiches
    Heat a large skillet or griddle over medium-low heat. Place the sandwiches in the pan and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is completely melted. Press down gently with a spatula occasionally to help the sandwiches cook evenly.
  5. Serve
    Remove the grilled cheese sandwiches from the pan and let them rest for 1 minute before cutting in half. Serve immediately while hot and cheese is still melty.
