  1. Prepare the ingredients
    Slice the mozzarella and tomatoes into even rounds. Pat the tomato slices with paper towels to remove excess moisture. Tear or roughly chop the basil leaves.
  2. Season the tomatoes
    Place tomato slices on a plate and sprinkle with salt, pepper, and dried oregano. Let sit for 2-3 minutes to enhance flavor.
  3. Assemble the sandwiches
    Butter one side of each bread slice. Flip two slices over (butter side down) and layer with mozzarella, seasoned tomato slices, fresh basil, and a drizzle of balsamic glaze. Sprinkle with garlic powder and top with remaining mozzarella. Place remaining bread slices on top, butter side up.
  4. Preheat the pan
    Heat a large skillet or griddle over medium heat. Add 1 tablespoon of olive oil to the pan and allow it to heat up.
  5. Grill the sandwiches
    Place sandwiches in the pan and cook for 3-4 minutes until golden brown. Add remaining olive oil to the pan, carefully flip the sandwiches, and cook for another 3-4 minutes until the cheese is completely melted and the bread is crispy and golden.
  6. Rest and serve
    Transfer sandwiches to a cutting board and let rest for 1 minute. Cut diagonally, drizzle with additional balsamic glaze if desired, and serve immediately while hot and cheese is still melty.
