  1. Prepare the chicken
    Preheat oven to 375°F (190°C). Place each chicken breast on a cutting board and, using a sharp knife, cut a horizontal slit through the thickest part to create a pocket, being careful not to cut all the way through.
  2. Season the chicken
    In a small bowl, combine the Italian seasoning, garlic powder, salt, pepper, and red pepper flakes if using. Rub the outside of each chicken breast with olive oil, then season generously with the spice mixture, including inside the pockets.
  3. Stuff the chicken
    Open each chicken pocket and layer with 2 slices of mozzarella, 2 slices of tomato, and a few basil leaves. Secure with toothpicks if necessary to keep the filling from falling out during cooking.
  4. Bake the chicken
    Place the stuffed chicken breasts in a baking dish and drizzle with the remaining olive oil. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink (internal temperature should reach 165°F or 74°C).
  5. Rest and serve
    Remove the chicken from the oven and let rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat. Remove any toothpicks before serving.
  6. Garnish and finish
    Transfer the chicken to serving plates, drizzle with balsamic glaze, and garnish with additional fresh basil leaves. Serve immediately while hot and melty.
