Instructions

  1. Prepare the Tomato Mixture
In a medium bowl, combine the diced tomatoes, minced garlic, basil, 2 tablespoons olive oil, balsamic vinegar, lemon juice, salt, and pepper. Mix gently and let sit at room temperature for at least 15 minutes to allow the flavors to meld together.
  2. Toast the Bread
Preheat your oven to 450°F (230°C). Arrange the bread slices on a baking sheet and brush both sides lightly with the remaining olive oil. Bake for 5-6 minutes, or until the bread is golden and crispy around the edges. Turn halfway through baking to ensure even toasting.
  3. Rub with Garlic
While the bread is still warm, rub one side of each slice with the whole garlic clove. The rough surface of the toasted bread will act like a grater, infusing the bread with fresh garlic flavor.
  4. Assemble the Bruschetta
Top each bread slice with a generous spoonful of the tomato mixture, ensuring some of the juices soak into the bread. If using, sprinkle with a little Parmigiano-Reggiano cheese.
  5. Serve Immediately
Arrange the bruschetta on a serving platter. Drizzle with a little extra olive oil if desired, add a few fresh basil leaves for garnish, and serve immediately while the bread is still crisp and the topping is fresh.
