  1. Prepare the mac and cheese
    If using leftover mac and cheese, warm it slightly in the microwave until just heated through but not hot (about 30 seconds). If it seems dry, stir in 1-2 tablespoons of milk to loosen it up. If making fresh mac and cheese, prepare according to your recipe but make it slightly creamier than usual.
  2. Create the cheese mixture
    In a medium bowl, combine 1½ cups of the shredded cheddar cheese, ¾ cup of the gruyère cheese, cream cheese, garlic powder, dijon mustard, and cayenne pepper (if using). Mix well until all ingredients are thoroughly combined.
  3. Assemble the sandwiches
    Butter one side of each bread slice. Flip the bread slices over so the unbuttered sides are facing up. Spread the cheese mixture evenly on four of the bread slices. Top each with about ½ cup of mac and cheese, spreading it evenly but leaving a small border around the edges. Sprinkle the remaining shredded cheddar and gruyère over the mac and cheese, then top with the remaining bread slices, buttered sides up.
  4. Grill the sandwiches
    Heat a large skillet or griddle over medium-low heat. Place the assembled sandwiches in the skillet, working in batches if necessary. Cook for 3-4 minutes on each side until the bread is golden brown and crispy and the cheese is completely melted. Press down gently with a spatula occasionally to ensure even cooking.
  5. Rest and serve
    Remove the sandwiches from the heat and let them rest for 2 minutes before cutting in half diagonally. This helps prevent the mac and cheese from oozing out too much. Sprinkle with chopped chives if desired, and serve immediately while hot and gooey.
