Classic Mexican cheese-filled tortillas, crispy on the outside

Prepare the vegetablesHeat the vegetable oil in a large skillet over medium heat. Add the diced onions and cook until translucent, about 3-4 minutes. Add the bell peppers, jalapeño (if using), and garlic. Cook for another 3 minutes until vegetables have softened. Stir in cumin, oregano, salt and pepper. Remove from heat and set aside.

Assemble the quesadillasLay four tortillas on a clean work surface. Sprinkle an even layer of the mixed cheeses on each tortilla, covering about half of the surface. Add a portion of the vegetable mixture on top of the cheese, then sprinkle with additional cheese and some fresh cilantro. Fold each tortilla in half to create a half-moon shape.

Cook the quesadillasHeat a large non-stick skillet or griddle over medium heat. Place one or two quesadillas in the pan (depending on size) and cook until the bottom is golden brown and crispy, about 2-3 minutes. Carefully flip and cook the other side until golden and the cheese is completely melted, about 2 minutes more. Transfer to a cutting board.

Slice and serveAllow quesadillas to cool slightly, then cut each into 3 wedges using a sharp knife or pizza cutter. Serve immediately with your favorite toppings such as sour cream, guacamole, pico de gallo, or salsa.
