Prepare the breadLay out the 4 slices of bread on a clean work surface. Butter one side of each slice generously with 1/2 tablespoon of butter per slice, spreading it all the way to the edges.

Season the butter (optional)If using, mix the garlic powder, onion powder, and cayenne pepper together in a small bowl. Sprinkle this mixture lightly over the buttered sides of the bread for extra flavor.

Assemble the sandwichesWith the buttered sides facing down, place 2 slices of American cheese on one slice of bread, and 2 slices of cheddar on another slice of bread. If using mayonnaise, spread a thin layer on the unbuttered sides of the remaining bread slices. Close the sandwiches with the buttered sides facing outward.

Heat the panHeat a large skillet or griddle over medium-low heat. You want the pan hot enough to brown the bread slowly, allowing the cheese to melt completely before the bread gets too dark.

Cook the sandwichesPlace the assembled sandwiches in the heated skillet. Cook for 3-4 minutes on the first side until golden brown. Press down gently with a spatula occasionally to ensure even browning and to help the cheese melt.

Flip and finish cookingCarefully flip the sandwiches using a spatula. Cook for another 2-3 minutes on the second side until golden brown and the cheese is completely melted and gooey. If needed, lower the heat to prevent burning.

Rest briefly and serveRemove the sandwiches from the pan and let them rest for 1 minute on a cutting board. This allows the cheese to set slightly. Cut diagonally and serve immediately while hot and melty.
