Instructions

  1. Prepare the bread
If using a panini press, preheat it to medium-high heat. Slice ciabatta rolls in half horizontally if not already split. Lightly brush the outside of each bread slice with olive oil. Rub the cut side of each bread slice with the halved garlic clove to infuse flavor.
  2. Assemble the panini
On the bottom half of each ciabatta, layer the mozzarella slices, followed by tomato slices. Sprinkle with salt and pepper. Add fresh basil leaves on top of the tomatoes. If using, sprinkle with a pinch of dried oregano. Drizzle lightly with balsamic glaze. Top with the remaining bread halves, olive oil side facing out.
  3. Grill the panini
Place the assembled panini in the preheated panini press and close the lid. Grill for about 4-5 minutes until the bread is toasted and crisp, and the cheese has melted. If you don't have a panini press, cook the sandwiches in a skillet over medium heat, pressing down with a heavy pan, for about 3-4 minutes per side.
  4. Serve the panini
Remove the panini from the grill or pan and let rest for 1-2 minutes. Cut each panini in half diagonally and serve immediately while the cheese is still warm and melty. Serve with additional balsamic glaze on the side if desired.
