  1. Prepare the tomato mixture
    In a medium bowl, combine the diced tomatoes, minced garlic, sliced basil, olive oil, balsamic vinegar, salt, pepper, and red pepper flakes if using. Stir gently and let the mixture sit at room temperature for at least 10 minutes to allow the flavors to blend.
  2. Toast the bread
    Preheat your oven to 450°F (230°C) or heat a grill to medium-high. Arrange the bread slices on a baking sheet and brush both sides lightly with olive oil. Bake or grill for 3-4 minutes until golden and crisp, turning once halfway through.
  3. Rub with garlic
    While the bread is still warm, rub one side of each slice with the whole garlic cloves. The rough surface of the toasted bread will act as a grater and infuse the bread with garlic flavor.
  4. Assemble the bruschetta
    Spoon the tomato mixture generously onto each slice of bread. If using, sprinkle with a little Parmesan cheese. Serve immediately while the bread is still warm and crisp.
  5. Garnish and serve
    Add a few extra basil leaves on top for garnish, and drizzle with a little more olive oil if desired. Serve on a large platter for sharing as an appetizer.
