  1. Prepare the flatbreads
    Warm the flatbreads or tortillas in a dry skillet over medium heat for about 30 seconds on each side, or microwave for 10-15 seconds, until soft and pliable. Set aside and cover to keep warm.
  2. Make the vegetable filling
    In a medium bowl, combine the cucumber, bell pepper, cherry tomatoes, red onion, and olives. Drizzle with olive oil and lemon juice, then sprinkle with dried oregano. Toss gently to combine.
  3. Assemble the wraps
    Spread about 1/4 cup of hummus onto each flatbread, leaving a 1-inch border around the edges. Layer spinach leaves evenly over the hummus.
  4. Add fillings
    Distribute the vegetable mixture evenly among the flatbreads. Sprinkle each with crumbled feta cheese.
  5. Roll and serve
    Fold in the sides of each flatbread, then roll up tightly from the bottom, enclosing the filling. Cut each wrap in half diagonally and serve immediately, or wrap in parchment paper for a portable meal.
