
Hummus with Pita
Creamy chickpea dip served with warm pita bread

Prepare the chickpeasDrain the chickpeas, reserving the liquid. Rinse the chickpeas thoroughly under cold water to remove excess starch and sodium. For extra creamy hummus, you can peel the chickpeas by gently pinching each one to remove the skin.

Blend the base ingredientsIn a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, and 2 tablespoons of olive oil. Process for 1-2 minutes until the mixture starts to become smooth.

Add seasonings and adjust consistencyAdd the cumin, salt, and pepper to the food processor. While processing, gradually add 2-4 tablespoons of the reserved chickpea liquid or cold water until the hummus reaches your desired consistency. For smoother hummus, process for an additional 1-2 minutes.

Taste and adjustStop the processor and taste the hummus. Adjust seasonings if needed, adding more salt, lemon juice, or garlic according to your preference. Process again briefly to incorporate any additions.

Prepare the pitaPreheat oven to 350°F (175°C). Cut each pita bread into 6-8 triangles. Place the triangles on a baking sheet and warm in the oven for 5 minutes until slightly crisp but still soft enough to scoop hummus.

Serve with styleTransfer the hummus to a serving bowl. Using the back of a spoon, create a shallow well in the center. Drizzle with additional olive oil, and sprinkle with paprika and chopped parsley. Serve with warm pita triangles on the side.
