  1. Prepare the tuna salad
    In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, lemon juice, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly incorporated and set aside.
  2. Toast the bread
    Spread butter on one side of each bread slice. Place the bread slices, butter side down, on a baking sheet or in a large skillet over medium heat. Toast until golden brown, about 2-3 minutes.
  3. Assemble the sandwiches
    Remove the bread from the heat and place on a work surface with the toasted side down. Divide the tuna mixture evenly among 4 bread slices. If using tomatoes, place slices on top of the tuna mixture. Top each with 2 slices of cheddar cheese.
  4. Melt the cheese
    Preheat the broiler to high. Place the assembled open-faced sandwiches on a baking sheet and broil for 2-3 minutes, or until the cheese is completely melted and beginning to bubble and brown slightly. Watch carefully to prevent burning.
  5. Finish and serve
    Remove from broiler and top each sandwich with the remaining bread slices, toasted side up. Cut sandwiches in half diagonally if desired and serve immediately while hot and melty.
