  1. Cook the bacon
    In a large skillet over medium heat, arrange the bacon slices in a single layer. Cook until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess grease.
  2. Prepare the spread
    In a small bowl, combine mayonnaise, Dijon mustard (if using), black pepper, and garlic powder (if using). Mix well until smooth and set aside.
  3. Prepare the bread
    Toast the sourdough bread slices until golden brown. Let cool slightly before assembling to prevent wilting the lettuce.
  4. Season the tomatoes
    Place tomato slices on a paper towel to remove excess moisture. Sprinkle with a pinch of salt and pepper to enhance flavor.
  5. Assemble the sandwich
    Spread the mayonnaise mixture evenly on one side of each bread slice. On two of the slices, layer lettuce leaves, followed by tomato slices, and then bacon strips. Add avocado slices if using. Top with the remaining bread slices, mayo side down.
  6. Cut and serve
    Cut each sandwich diagonally and serve immediately while the bacon is still warm and crispy. Secure with toothpicks if needed.
