Prepare the skilletPreheat your oven to 375°F (190°C). Have a 10-inch cast-iron skillet or oven-safe dish ready for the final baking step.

Cook the chorizoIn a large skillet over medium heat, cook the chorizo, breaking it up with a wooden spoon until it begins to brown and render its fat, about 5-7 minutes.

Add aromaticsAdd the diced onion, poblano pepper, and jalapeño (if using) to the skillet with the chorizo. Cook until the vegetables soften, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Prepare the cheese mixtureIn a large bowl, combine the shredded Oaxaca, Monterey Jack, and Asadero or Chihuahua cheeses. If using beer, pour it over the cheese and gently toss to coat the cheese.

Assemble the queso fundidoTransfer the cooked chorizo and vegetable mixture to the cast-iron skillet, spreading it evenly. Sprinkle the cheese mixture on top, covering the chorizo completely.

Bake the quesoPlace the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is completely melted, bubbly, and starting to brown at the edges.

Serve hotRemove from the oven and immediately sprinkle with fresh chopped cilantro. Serve right away with warm tortillas and lime wedges while the cheese is still molten and stretchy.
